At the 2010 census Pine Canyon had a population of 1,822. The population density was 546.1 people per square mile. The racial makeup of Pine Canyon was 1,173 White, 29 African American, 15 Native American, 18 Asian, 0 Pacific Islander, 490 from other races, and 97 from two or more races. Hispanic or Latino of any race were 984 people.
The census reported that 1,816 people lived in households, no one lived in non-institutionalized group quarters and 6 were institutionalized.
There were 554 households, 258 had children under the age of 18 living in them, 347 were opposite-sex married couples living together, 74 had a female householder with no husband present, 42 had a male householder with no wife present.
